Our Marrons Glacés feature a subtle marriage of Madagascar Bourbon Vanilla beans and Marron d'Ardèche chestnuts. Handcrafted, they are candied in the heart of the fruit, before being glazed. The creations are a play on textures, blending the sweetness and childhood scent of lightly woody vanilla with the density and roasted length of chestnut. They have an unmistakably creamy flavor.
For it to be perfect... Everything has to be done gently: after peeling by hand, the large Piedmont "Turins" are delicately candied in a syrup flavored with Bourbon vanilla pods, before being drained and glazed. The pleasure is to have the tenderness of the chestnut with the mellowness of the confit. Tasting becomes a timeless pleasure.
